Exclusive Operations Report
Sanitary Design as an Enabler of Food Safety (Part 3) Proactively working to enhance food safety, a group of sanitation professionals from the nation's top food companies last year began to share ideas on improving food safety through equipment design enhancements. This group, now known as the Grocery Manufacturers Association's Sanitary Design Working Group, modified the AMI Ten Principles of Equipment Design to adapt them to low-moisture foods and further enhance equipment designs for all processors, their suppliers and co-manufacturers. SF&WB Operations Weekly
asked the facilitator of that group, Joe Stout, global director, product protection and hygienic design for Northfield, Ill.-based Kraft Foods, to share the group's findings. Here's the third of four installments on the "10 Principles of Equipment Design for Low-moisture Foods." more |

Grecian Delight Goes into Artisan Flatbreads
It used to be so simple. Mexican food producers cranked out tortillas. Greek, Israeli and other Mediterranean food manufacturers made pitas. Italian companies created pizza bread. Indian cuisine included Naan bread. It was almost as straightforward as an ethnic bloodline.Today, however, the world of flatbreads has become increasingly complex as consumers seek new shapes, sizes and flavors to add a twist to conventional ethnic fare. That's why Grecian Delight Foods has expanded beyond its roots of producing pitas and began rolling out lavash, Naan, pizza bread, flat sandwich buns and hybrids of other artisan flatbreads to add innovation to the sandwich or
pizza category and flair to the dinner eating occasion. more

How Bakers Can Leverage the Social Media
Dan Malovany is not a complete idiot when it comes to social media. Okay, he never Tweeted anybody, but he does understand why they don't call it Twitting. He doesn't have a Facebook account, but he has never referred to it as "MyFace" as a fellow editor once did. And yeah, he doesn't know the entire abbreviated language of texting, but he does know what LOL, CYA and FUBAR mean. So when he found out that Klosterman Baking recently jumped on the social media bandwagon, he jumped at the opportunity to chat (via telephone) with Kim Klosterman, chief executive officer of the Cincinnati-based company, about how bakers can most effectively use this new medium as a part of
a broader public relations initiative. more
