Tortilla Maker Linked to Student Illnesses Chicago-based Del Rey Tortilleria found itself blasted all over the front page of USA Today
this week in the first part of an investigation by the newspaper into food safety and the school lunch program. The extensive report alleges Del Rey's flour tortillas made 70 children sick at a Racine, Wis., school in 2007, as well as similar outbreaks at more than a dozen schools in two other states. Despite repeated Food and Drug Administration investigations and warning about insect infestation, improper sanitation and suspect operating procedures, local school and health officials essentially were in the blind about what was making their children violently sick. Del Rey Finds Itself in Taco Hell Dan Malovany doesn't
know if there is such a thing called "damage control" for Del Rey Tortillera after reading the Nov. 17 cover story on its investigation into food safety and the nation's school lunch programs. Particularly damaging is the image of Del Rey Tortillas next to a photo of students after they've puked their brains out from tacos. Maybe even more troubling is the report that local health officials in Racine, Wis., only found out after the outbreak that the Chicago-based company "had a long history of making children sick," according to article on the front page of USA Today.

Sanitary Design as an Enabler of Food Safety (Part 4) Proactively working to enhance food safety, a group of sanitation professionals from the nation's top food companies last year began to share ideas on improving food safety through equipment design enhancements. This group, now known as the Grocery Manufacturers Association's Sanitary Design Working Group, modified the AMI Ten Principles of Equipment Design to adapt them to low-moisture foods and further enhance equipment designs for all processors, their suppliers and co-manufacturers. Barry Callebaut Selects New Supply Chain Chief Cocoa and chocolate producer Barry Callebaut has named Ken Cotich as vice president of the company's operations and supply chain organization for the Americas region. Cotich was most recently vice president of sales-corporate accounts for the Chicago-based company. He joined Barry Callebaut in 2004, and previously held operations and engineering positions with D.F. Stauffer Biscuit Co. and Frito-Lay.
