Stage 1: Some sodium bicarbonate is solubilized early for uniform gas cell distribution through the dough.
Stage 2: More sodium bicarbonate is solubilized later within the dough prior to the press and oven, producing more gas cells that join existing cells.
Stage 3: In the oven, complete solubility of the sodium bicarbonate occurs and all gas cells expand for optimally leavened tortillas.
This is in contrast to traditional practices, in which tortillas are leavened using conventional baking powder, a premixed combination of sodium bicarbonate and acid salts that allows only limited control of leavening.
Better control of the leavening process can result in tortillas with rich, brown toast points for better flavor and aroma, uniform, open cell structure for greater height and volume, and reduced translucency and improved texture. Results may vary depending upon tortilla formulation and processing conditions.

Tonelli’s computerized management system provides complete automation to the mixing process and can store more than 50 recipes with relative process parameters such as time, speed, air pressure and stages for adding ingredients. The Tonelli-designed software includes a sophisticated Allen Bradley PLC with color touch-panel screen that offers user-friendly graphic interfaces and icons.
The company developed an automated mixing system that utilizes robotics for transporting bowls throughout a bakery plant. The bowls travel on fork trucks that follow a laser-guided track, and the system does not require an operator to move bowls from ingredient batching to the mixer to the bowl hoist and through cleaning systems.
Tonelli exhibited a Mix/Cook/Chill system that allows for automation and precise process control for specialty bakery and products that require heating or cooling. A hermetic seal can be created in the mixing environment and can work in a pressurized atmosphere or under vacuum. Steam or water can be circulated in a double-walled bowl and inert gases such as liquid N2 can be injected to promote rapid cooling.
