PenTech 8500  from Penford Food Ingredients is a modified potato-based food starch that incorporates the company’s new PenNovo technology. The casein-replacement ingredient reduces the use of high-priced rennet casein to 10% in a standard imitation cheese formulation, while still maintaining superior melt, stretch and mouthfeel, excellent shred, firmness and enhanced water and oil stability in cheese products. Recommended applications include pizza, shredded, sliced and block cheese.
