The increase of vitamin D in yeast breads is the result of a U.S. Food and Drug Administration (FDA) amendment to its food-additive regulation that allows bakers to increase the level of vitamin D in bread and make claims ranging from “a good source” to “high,” “rich in” or “excellent source,” when they use vitamin D2 baker’s yeast.
