Puratos recently received a U.S. patent for the enzyme technology used in its newest generation of S500 products. The S500 bread improver range is based on xylanase technology obtained from specific microorganisms discovered in Antarctica. According to the company, one of the advantages of using the enzyme is its high-catalytic activity at lower temperatures, which enables the S500 range to give additional dough tolerance and security in processes such as retarded fermentation and short freezing. The S500 range was developed to give customers peace of mind in every baking condition and application, Puratos says.
