Sensient Colors, LLC
DustPro NXT natural color powders from Sensient Colors, LLC, are formulated to reduce dust levels while improving color solubility. The natural color powders were developed to prevent color particulates from sticking together, improve pouring capabilities, minimize color solubility and prevent color bleed. (The image demonstrates the ability of Sensient’s Advanced Emulsion Technology to prevent color bleed [left] versus typical natural colors.) When added to water, they dissolve rapidly and reduce mixing time. DustPro NXT natural color powders can be used in baking, processed food, dairy and beverage applications. A full-color spectrum is available, including customized colors to meet specific shade requirements.

DuPont Nutrition & Health
Evidence supplied by DuPont Nutrition & Health supports Health Canada’s approval of polydextrose as a source of dietary fiber in food products. The decision, which takes effect immediately, is based on laboratory and clinical studies using Litesse polydextrose from the DuPont Danisco portfolio. The studies demonstrated a positive impact on digestive health, in particular the production of energy-yielding metabolites during colonic fermentation and improved bowel function. With the approval, Canada officially joins the numerous countries worldwide that already recognize Litesse as a dietary fiber for use in a wide range of bakery, dairy and beverage products.

Puratos recently received a U.S. patent for the enzyme technology used in its newest generation of S500 products. The S500 bread improver range is based on xylanase technology obtained from specific microorganisms discovered in Antarctica. According to the company, one of the advantages of using the enzyme is its high-catalytic activity at lower temperatures, which enables the S500 range to give additional dough tolerance and security in processes such as retarded fermentation and short freezing. The S500 range was developed to give customers peace of mind in every baking condition and application, Puratos says.
