Listeria monocytogenes assay
3M Food Safety launches its new 3M Molecular Detection Assay Listeria monocytogenes, the fourth test available for its 3M Molecular Detection System. The test detects one to five colony-forming units (CFU) of L. monocytogenes per sample, offers a simultaneous amplification and detection process that is complete in 75 minutes and identifies positive samples in as early as 20 minutes. In addition, users can test one to 96 samples per run and incorporate other assays in the same run using the same protocol. 3M Molecular Detection Assays use isothermal amplification of nucleic acid sequences, plus bioluminescence to detect the amplification. Presumptive positive results are delivered in real time, while negative results are displayed after the assay is completed.

LloydPans is introducing a new pan coating for its line of baking pans at the International Baking Industry Exposition (IBIE). The Silver-Kote coating is permanent, provides easy release for the life of the pan and does not require re-coating, according to the company. It’s applied to baking pans and sheets using a Type 2, or light coat anodizing, a process that fuses a ceramic-like shell directly onto the pan. The permanent, waterbased coating is toxin-free, preseasoned and provides for easier depanning, cleaning and release when used in combination with standard release aids.
