Hydration and mixing system

The Rapidojet hydration and mixing system can produce everything from fully hydrated minor ingredients (bran, whole wheat, flour for sponge and more) to complete doughs (bread, roll, cake, muffin and pastry), according to Bakery Concepts International LLC. Other applications include grain soaking and gluten and potato flake hydration. Three models are available: The Rapidojet RJ 3500 VT (shown), which offers hydration of 20-300%, has capacity maximum of 4,000 kg./hour (depending on the product) and can be used for batch or continuous processing; the Rapidojet RJ 700 VT Mini, which offers hydration of 20-300% and has capacity maximum of 1,200 kg./hour (depending on the product); and the Rapidojet RJ 5000 VTl which runs approximately 5,000 kg./hour at 100% hydration. The models feature a flour hopper, screw feeder, mixing chamber, touchscreen and stainless-steel finish.

Multipurpose lubricant

Klübertemp GR AR 555 is a multipurpose, food-safe lubricant that offers guards against corrosion and offers high evaporation stability, says Klüber Lubrication. Developed for high-temperature applications (up to 250 deg. C) and applications exposed to aggressive media, Klübertemp GR AR 555 is a white, homogeneous, long-term grease, based on a perfluorinated polyether oil (PFPE) and polytetrafluoroethylene (PTFE). The product is NSF H1-registered. Common applications include pillow blocks/bearings, seals, rotary joints and ball-bearing chains.

Compounding and filling vessels

Charles Ross & Son Co. introduces a new line of compounding and filling vessels with a magnetically-coupled turbine agitator for sanitary applications. The 60-liter vessel (shown) features an aseptic magnetic mixer designed to stir a low-viscosity suspension as it is being discharged under pressure of nitrogen into its final container. The magnetically-coupled turbine floats during operation at up to 490 rpm. The unit is optimized for cleaning and sterilization, with no mechanical seals or stuffing boxes to pose contamination risks. In between batches, a clean-in-place (CIP) tube and spray ball assembly lower into the vessel. Both the vessel and jacket are ASME Code-stamped and board-certified. All wetted parts are stainless steel 316L. The vessel can be easily wheeled from one location to another using swivel casters and Food and Drug Administration-compliant antimicrobial wheels with brakes.

Baking cups
