The International Pizza Expo will take place March 27–30 at the Las Vegas Convention Center. This is the largest pizza show in the world, attracting thousands of individuals comprising the global pizza industry. Nearly 7,000 attendees participated in the 2016 show, interacting with 470 exhibiting companies.

Annual competitions at the International Pizza Expo include the International Pizza Challenge (bake-offs before judges in five divisions, including the “Pizza Maker of the Year” finals) and the World Pizza Games (a skills competition across five divisions).

The event also features multiple workshops, including the School of Pizzeria Management (11 advanced courses in running a profitable pizza restaurant company) and Scott’s Las Vegas Pizza Tour (an evening bus tour of three notable Las Vegas pizzerias).

The education program will include dozens of seminars, panel discussions and pizzeria menu demonstrations during the event. Session topics will feature subjects like pizza innovation, understanding fermentation, specialty pizza cheeses, investing in commodities, controlling food and labor costs, marketing to millennials, technical insight into pizza crusts, baking artisan bread, maximizing profits, food safety and government relations, menu labeling, ingredient strategies, pizza styles, grain selection, gluten-free and many more. Gabriel Stulman, celebrity restaurateur, Tuesday, March 28 at 8:15 am, who has opened six restaurants within five years in Manhattan’s West Village

Michael Lastoria, founder and CEO, &pizza, Wednesday, March 29 at 8:15 am, who opened his first pizzeria in 2012 and has since opened 20 more in Washington, D.C., Maryland, New York, Pennsylvania and Virginia

The show will also include a pizza baking demonstration by Tony Gemignani, a 12-time World Pizza Champion, author of “The Pizza Bible,” proprietor of the International School of Pizza and owner of 16 pizzerias, and Graziano Bertuzzo, founder of the Scuola Italiana Pizzaioli. The demonstration, “Making Pizzas with Tony Gemignani,” will feature in-depth sessions on making starters, dough and pizzas.
