Snack Food & Wholesale Bakery and The Sanitary Design Workshop are pleased to announce that Snack Food & Wholesale Bakery is the exclusive media partner of the workshop, taking place March 17 and 18 at the Allerton Hotel, Chicago.
This year’s workshop theme is “Equipment & Plant Design for Allergen & Pathogen Control in Low-Moisture Foods,” a unique, hands-on, educational opportunity presented by experts who are “in the trenches” and employed in processing facilities. Topics covered will include practical and proven approaches to cleaning, sanitary design, equipment layout, and personnel requirements for engineers, sanitarians, and plant managers.
Presenters at this year’s workshop include key figures from General Mills, Commercial Food Sanitation, The Kellogg Co., PepsiCo, MOM Brands, Nestlé, Hearthside Food Solutions, Kraft Foods, GMA and American Institute of Baking. The Sanitary Design Workshop is a unique educational opportunity for engineers, sanitarians and plant managers who will become leaders in sanitary design. They will come away with practical, proven approaches to cleaning, sanitary design, equipment layout and personnel requirements that utilize verifiable, economically sound and HACCP-supported processes. The workshop includes equipment design demonstrations using photos and prototypes, and the introduction of a process for continuous improvement, including:

- Case studies reviewing applications in the field
- Hands-on demonstrations
- Discussion of what the Food Safety Modernization Act (FSMA) means for sanitary design
