The fresh bread category, which includes pan/sandwich breads, buns, rolls, bagels, and English muffins, as well as artisan breads sold in the in-store bakery, has gained some strong momentum during the ongoing COVID-19 pandemic. Bakeries are now seeking to maintain this momentum moving forward. A key strategy to help achieve ongoing incremental sales growth includes developing products for increasingly popular dietary niches, including keto, Paleo, vegan, gluten-free, better-for-you, and clean-label bread products—some of which continue to grow more mainstream, with lasting appeal.
