THE COMPANY: FIKA Espresso Bar, New York
THE HOOK:Founded by Swedes Lars Akerlund and David Johansson in 2006, FIKA Espresso Bar recently introduced its first line of hand-rolled truffles, pralines and chocolate bars called FIKA Choklad. The chocolates were created exclusively for the company by its newly appointed executive pastry chef and chocolatier Håkan Mårtensson. Each piece in the line is handmade using dark and milk chocolate from Barry Callebaut and Valrhona and fresh ingredients, such as lingonberries, raspberries, passion fruit, hazelnut, Tahitian Vanilla, espresso, ginger bread spices and various liqueurs. Specifically, the line includes six chocolates: Dark Rum, Raspberry Cream, Poire William, Vanilla and Pear Cream, Espresso Cream and Hazelnut Gianduja.
INGREDIENTS: Poire William: Milk chocolate, butter fondant (inverted sugar), pear cognac.
