Bissinger's may be a 350-year-old confectionery company, but it's on the cusp of a new era.

From using a melanger to custom-design moulds and packaging, Scott Witherow has put his Southern artisan imprint into his chocolate company.

“We have been very careful about keeping the integrity of the recipes intact,” Siegert says.

Described as combination of “MTV meets Willy Wonka,” Las Vegas-based Sugar Factory will open a new 8,000-sq.-ft. brasserie and retail store near Chicago’s O’Hare Airport.

The company’s new space at 1628 Fatherland St. in Nashville, Tenn., is a renovated 19th century grocery store in East Nashville.

"Most chocolate stores sell chocolate, but Chocolate Works is unique in that customers can see the process from beginning to end, even participate in it, and then get to eat it!" says Rhonda Daniels, co-owner.
