Consumers are increasingly seeking "better-for-you" products that deliver nutrition and functionality without sacrificing taste. We recently were able to connect with Cynthia Machado, Ph.D., senior technical business development manager, Blue Diamond Global Ingredients, on how producers can use almonds within chocolate products.


Liz Parker Kuhn: How can producers use almonds as inclusions in chocolate for texture? 

Cynthia Machado: Premium almonds can be utilized as inclusions and toppers in chocolate to add textures, visual appeal, and interesting flavors. Whole, sliced and diced almonds are available to use in chocolate applications for a satisfying crunch, unique topping or flavorful chocolate centers. Our customizable almonds come in a variety of forms and flavors so food manufacturers can have exactly what they need and push innovation in product development. Savory and sweet options are available to satisfy broader consumer palates. 


LPK: What about the use of almond butter with chocolate as an inclusion or filling? 

CM: Almond butter mixed with other ingredients is a great option for confectionary fillings. It can add a rich, nutty flavor and creamy texture. As consumers become more ingredient-conscious, almonds provide a valuable solution for creating chocolate applications that are free from certain allergens such as dairy and peanuts.

The creamy, smooth consistency of almond butter offers a contrast to the firm snap of a chocolate shell. When used as a filling, it provides an indulgent and satisfying melt-in-your-mouth experience. Almond butter has a naturally sweet, roasted nut flavor that complements milk and dark chocolate. Its subtle bitterness enhances the chocolate's complexity, while its sweetness provides balance.

The combination of almond butter and chocolate is more than just delicious. It is a premium, nutrient-dense and versatile option that elevates traditional chocolate confections. Whether you are developing artisanal chocolate bars, health-conscious snack bars or innovative truffles, almond butter can bring a creamy, nutty richness that adds both flavor and texture sophistication.

 

LPK: What about the use of flavored almonds in different formats—how can that be used in chocolate and other confections?

CM: Using flavored almonds in various formats opens a world of flavorful possibilities in both chocolate and broader confectionery applications. Whether they are candied, spiced, smoked, savory, or sweet, flavored almonds add crunch, complexity, and a premium feel to confections.

Whole diced or sliced flavored almonds can be folded into a ganache or used as a layer under soft fillings. Flavored almonds bring depth and a signature twist to traditional sugar-based confections. Combine flavored almonds with other ingredients like dried fruit, puffed grains, or seeds in chocolate for a snackable, premium product. 


LPK: Does Blue Diamond offer solutions to confectionery producers for items like the above?

CM: Blue Diamond Almond ingredients are highly customizable and now available in more forms and flavors than ever. We collaborate with manufacturers to develop the best formulation to fit their application needs. From curated flavor combinations to different forms, we are proud to be able to tailor our ingredients to our customers' and consumers' demands. 

With cocoa bean prices currently around $8,000 per ton, incorporating more almond ingredients into your chocolate products may help reduce overall ingredient costs.


LPK: What’s new from Blue Diamond in 2025, ingredient-wise?

CM: Our customization efforts have expanded and we have more flavors and forms to choose from. Unique flavors like Heat and Honey, Gingerbread, Strawberry, Spiced Hot Chocolate, or Smokehouse flavored almonds can add intrigue to a variety of chocolate products. Choose from more options or build something entirely new that will entice consumers and boost sales. 

We also offer customized almond butter fillings and spreads to meet specific customer requirements for flavor profile, viscosity, texture, and protein content.
