Gem Chocolates are proving that cacao can rise from the dead. In 1916, Pure Nacional cacao trees succumbed to disease and were lost to the many fine chocolate makers who revered them for their chocolate’s fruity and floral flavors. But what is lost can always be found; Pure Nacional cacao pods were rediscovered in 2007 in Peru and Gem Chocolates jumped at the opportunity. The company created the Lost & Found bar at 63 percent cocoa with Pure Nacional, Fortunato No. 4 chocolate to show why the chocolate is such a delicious legend.
