The University of Wisconsin-Madison’s Resident Course in Confectionery Technology, also known as “Candy School,” will be held virtually this summer in light of the COVID-19 pandemic.

Registrants will have access to videos of recorded lectures from July 6-30, as well as PDFs of slides, handouts, readings and other supplementary materials.

Between July 20-29, there will be 1 to 2 hours per business day of live online Q&A sessions to engage with and ask the instructors questions. These sessions allow students to clarify any questions raised in the lecture videos or get answers specific to their products and processes.

In addition, instructors will record short videos to give overviews of what would normally be covered in the in-person labs. Experts will walk students through processing, formulations and common troubleshooting for each type of candy.

In January, registration for the originally scheduled in-person class was full before it was offered to the public. Though Candy School is intended for technical personnel, it’s also of value to individuals in production, management and sales who wish to increase their knowledge of confectionery technology while working from home or the office.

The registration fee is $1,200. Registration closes June 17.
