PMCA goes nuts for farm to formulation educational course

Attendees will gain practical training on processing, allergens, and more.

The Professional Manufacturing Confectioners Association (PMCA) has created a two-and-a-half-day confectionery educational course titled "Nuts: From Farm to Formulation & Everything in Between," in Hubbard, OR from October 14–16. The course will be hosted by the food processor Northwest Hazelnut Company.

The org's members will enjoy priority registration for the course through August 2, after which PMCA will open up registration to the entire industry. Member price is $1,495 for the two-day summit, and the non-member price is $1,950.

During the brand new course, attendees will gain classroom and practical training on:

  • Raw materials
  • Processing
  • Safety and allergens
  • Shelf life and storage
  • Applications
  • Formulation
  • Troubleshooting
  • Sensory activities
  • Market data and trends 

According to PMCA, hands-on highlights include:

  • Hazelnut orchard visit: An experience heading straight to the source during harvest season.
  • Delicious yet Resilient Recipes: Gain insight on formulating tasty, shelf-stable items like toffees, brittles, meltaways, and nut clusters. 
  • Food Safety Made Simple: Learn to correctly use an allergen test kit, how roaster validation reduces harmful pathogens without compromising product quality, and more.   
  • The Science of Sensory: What impact do different roasting levels and methods have on flavor? What type of chocolate pairs best with your chosen nut? How can you tell if your nuts are rancid?
