Equip BriefsAmerican Key Food Products introduces a line of clean-label starches to the American market. Developed and produced by Emsland Group, the Empure line of potato- and pea-derived starches is manufactured through physical modification, enabling them to perform in challenging food applications. The line includes cook-up starches (Empure KS 100/200 and ES 100/200) and cold-swelling starches (KJEL 100/200/300/400 and EJEL 100). According to AKFP, the former are superior to native starches in shear, acid and heat stability, and have enhanced dispersing properties and swelling temperatures. The latter have similar enhanced properties. Applications range from snacks and baked goods to fruit fillings, soup mixes, puddings and ketchup.

Ingredient BriefsTicaloid GR 5420 and Ticaloid Tortilla from TIC Gums are blends of hydrocolloids that reproduce the benefits of guar gum in bakery items, but contain no guar. Ticaloid GR 5420 is a 100% replacement for guar gum in bakery mixes, including those for tortillas and flatbreads. Usage is 2-5 oz. per 100 lb. of flour. Ticaloid Tortilla facilitates machinability, moisture control and flexibility. The standard usage for this ingredient is 4-8 oz. per 100 lb. of flour. The company, however, recommends five parts water for every one part of gum used.
