American Key Food Products introduces a line of clean-label starches to the American market. Developed and produced by Emsland Group, the Empure line of potato- and pea-derived starches is manufactured through physical modification, enabling them to perform in challenging food applications. The line includes cook-up starches (Empure KS 100/200 and ES 100/200) and cold-swelling starches (KJEL 100/200/300/400 and EJEL 100). According to AKFP, the former are superior to native starches in shear, acid and heat stability, and have enhanced dispersing properties and swelling temperatures. The latter have similar enhanced properties. Applications range from snacks and baked goods to fruit fillings, soup mixes, puddings and ketchup.

Ticaloid GR 5420 and Ticaloid Tortilla from TIC Gums are blends of hydrocolloids that reproduce the benefits of guar gum in bakery items, but contain no guar. Ticaloid GR 5420 is a 100% replacement for guar gum in bakery mixes, including those for tortillas and flatbreads. Usage is 2-5 oz. per 100 lb. of flour. Ticaloid Tortilla facilitates machinability, moisture control and flexibility. The standard usage for this ingredient is 4-8 oz. per 100 lb. of flour. The company, however, recommends five parts water for every one part of gum used.

Zulka Pure Cane Sugar, an unrefined and granulated “Morena-style” sugar, has achieved verification from the Non-GMO Project, according to manufacturer Zucarmex USA. The verification confirms that Zulka adheres to the organization’s strict best practices for genetically modified organism (GMO) avoidance, including segregation and traceability of ingredients to prevent contamination. Zulka Pure Cane Sugar is real sugar pressed from fresh sugar cane. A cup-for-cup replacement for refined white sugar, Zulka can be used for any baking, cooking and beverage recipe calling for traditional granulated sugars.

An independent panel of experts determined that SunOpta Ingredients Group’s rice hull fiber is General Recognized as Safe (GRAS) for use in food and beverages. The all-natural, gluten-free ingredient is a highly concentrated source of fiber and can be used to enrich products such as snacks, nutrition bars, bread and baking mixes.

Organic bare ginger is now available from RoyalPacific Foods/The Ginger People. The product has no surface sugar, starch or dextrose coating. Dry and smooth to the touch, it has a soft, fiberless texture that makes it suitable for a variety of uses, including enrobing with chocolate, mixing into granola, sprinkling on cookies and blending into gelato. Derived from flaxseed, OptiSol 5300’s fibrous hydrocolloid mucilage and protein network provide synergistic functionality for a broad range of applications, include flat breads, gluten-free baked goods, bakery mixes, breading and batters. High in fiber and protein, it offers moisture migration control and can bind both fat and water for improved texture and crumb structure, increased volume and extended shelf life. According to the company, OptiSol 5300 also offers up to 40% cost savings over guar gum and other gum systems.

In addition, it can be used to replace fats and additives in pizza dough, resulting in clean-label pizzas made with four basic baking ingredients—four, water, salt and yeast—that have a soft, fluffy and juicy texture and short bite with no chewiness or crumb flaking.

Kartoffelmelcentralen (KMC) launches KMC GlazeMaker 25, a cost-effective, non-allergenic alternative to traditional egg-wash and dairy-based bakery glaze. Based on potato starch, KMC GlazeMaker 25 gives baked goods a fresh and appealing look that attracts the consumer’s eye. KMC GlazeMaker 25 also offers excellent adhesion properties when brushed or sprayed onto baked goods. It can be used to affix sesame seeds on buns, salt on pretzels and more and keeps toppings in place even after freezing, thawing and baking.
