The heart of the course is the examination of the function of ingredients and processing techniques and how to use them maximize quality and efficiency in the production of gourmet cookies, bars, and brownies. Troubleshooting techniques for these products is also an important part of lectures and hands-on labs.
Participants spend a portion of each day in AIB’s bakeshop learning the science behind choosing the right ingredients, including flour, sweeteners, and leavening agents. Other topics include discussions of the use of cocoa and chocolate, formula balance, brownie and bar production, cost controls, and ovens and baking.
Participants use with different mixers and processes to discover which is best for their operation.
