Ingredient Snapshot: Bakery ingredient manufacturer Pak Group, through its North American brand, Bellarise, has introduced Bellarise BellaSOFT Organic 1500 Plus. The California-based baking ingredient producer’s new bread softener and ESL system promises shelf life extension, overall cost savings, ease of use, and enhanced overall bread quality with their organic, non-GMO and clean label bakery solution. It is intended for use in fresh baked breads, as well as frozen varieties.

Alex Peña, director of product development for Bellarise, provided some insight on the company’s all- purpose organic softener and extended shelf life system. “Our customers asked us to develop a bread softener that worked just as well in both organic and conventional breads, frozen and fresh applications, that would extend shelf life to suit the application, and would simplify the production process,” says Peña. In addition, Peña points out that Bellarise BellaSOFT Organic 1500 Plus improves crumb structure, can be added to a dough along with other dry ingredients, has a low use rate that simplifies scaling and customization, and could be used in lean and sweet doughs. Due to its broad range of stated benefits and the fact that it helps industrial bakeries add an organic halo to their conventional breads, Peña has dubbed Bellarise BellaSOFT Organic 1500 Plus “the best organic softener on the market.”
