The Tortilla Industry Association (TIA) is bringing AIB International’s Tortilla Production Course to the Southern California Gas Energy Resources Center in Downey, CA, on Aug. 5-7. TIA’s goal is to make this hands-on training available to interested individuals at a more convenient location than Manhattan, KS, where it usually is offered.

Led by an experienced AIB instructor, the three-day course will focus on the technical aspects of flour tortilla production the first two days and on the technical aspects of corn tortilla production the third day. Participants will learn about mixing ingredients, temperature control, baking, troubleshooting and more in a fully equipped facility. Attendees will receive an official AIB Certificate upon completion of the course.

The tuition cost is $750 per person for TIA members and $850 per person for nonmembers. A detailed agenda and registration form are available at online at
