KG’s new TopSweet premix series, TopSweet Berliner 12.5% enables bakers to produce a variety of deep-fried specialties, including doughnuts and yeast-raised cakes and pastries, while simplifying their choice of raw materials. At just 12.5 percent, the premix constitutes only a small proportion of the dough, according to the company. All other ingredients—flour, sugar, yeast and whole egg—can be added individually. TopSweet Berliner 12.5% also offers bakers flexibility in the type of fats they use, has no flavor and optimizes baking results, even with retarded fermentation or freezing.
