Fruits can add a pop of color, flavor, and texture to snack and bakery products, but with consumers being more mindful of health and wellness, the use of fruits has expanded beyond the traditional uses.
A few weeks ago, I was able to travel to Bellingham, Washington, for the Raspberry Harvest Tour, which was sponsored by the National Processed Raspberry Council.
Exotic superfruits aren’t the only fruits in town loaded with health benefits, consumers are discovering. Many perennial favorites like cherries, blueberries and raspberries are packed with vitamins, antioxidants and other nutrients.
