DSM-Firmenich introduces ModulaSENSE maskers for bars
The line of ingredients is aimed at targeting bitterness and other undesirable notes.

Ingredients supplier DSM-Firmenich has launched ModulaSENSE maskers, designed to work with its Vertis CanolaPRO in formulation of protein bars and other products. According to the company, the maskers target bitterness, astringency, and licorice-like notes at a molecular level bars, ready-to-mix drinks and other items made with Vertis CanolaPRO protein isolate.
Vertis CanolaPRO reportedly is a complete, digestible, and sustainable rapeseed protein isolate. However, the company indicates, it is similar to other plant proteins in that it may present sensory challenges in certain applications. The Vertis CanolaPRO maskers are designed to enable manufacturers in formulation of higher-protein, better-tasting items.
Consumers continue to seek high-protein plant-based options without compromising on taste. This leaves brands facing a growing challenge: how to deliver nutrition that is not only functional but also delicious. Vertis CanolaPRO is said to be a versatile and sustainable source of high-quality plant nutrition. According to DSM-Firmenich, it is a complete protein, containing all nine essential amino acids, with a protein digestibility-corrected amino acid score of one, and is free from all major allergens. The ingredient reportedly imparts unique functionality benefits with excellent solubility, foaming, emulsification, and gelation properties. Vertis CanolaPRO is a certified upcycled ingredient said to valorize an existing side stream of canola oil production.
The company says ModulaSENSE maskers target multiple sensory pathways and intercept unwanted flavors before they activate key taste receptors. This is intended to enable higher volumes of Vertis CanolaPRO to be used while elevating the taste profile.

These new ModulaSENSE maskers are available in North America starting this month; they will be available in Europe beginning in September. Developed with protein bars and RTM drinks in mind, the company plans to expand into other applications in the future.
