The National Honey Board notes honey is a natural sweeter that enhances flavor and prolongs shelf life in a variety of breads and rolls. Honey’s carbohydrates are used by yeast for fermentation and the residual sugars provide sweetness to breads, rolls and bagels. Honey forms include blended, churned, crèmed, cystallized, filtered, raw, strained and organic.

Briess Malt & Ingredients introduced BriessBlend multigrain blends to its line of healthy, natural grain ingredients. BriessBlend Whole Grain Fine is a blend of particles of wheat, brown rice, oats, barley and rye, whereas BriessBlend Multigrain is a combination of soft red wheat, rye, triticale and pearled barley. Additionally, Briess is launching Insta Grains Brown Rice Thick Flakes Toasted, a whole grain ingredient that delivers a toasty, nutty flavor to baked and extruded goods and for inclusion in gluten-free products.

Land O’Lakes Ingredient Solutions launched a reduced-fat, reduced-sodium process cheese to help food companies meet the demand for “better-for-you” products. It contains 50% less fat and 35% less sodium than traditional process cheese without sacrificing the authentic cheese flavor, creamy mouthfeel and excellent melt characteristics. It also contains less cholesterol, fewer calories and more calcium and can be customized to meet preferences for color, flavor, melt and pack size.
