Ingredient Snapshot: Cargill says its EverSweet zero-calorie sweetener offers food and beverage companies a sweetener option to satisfy consumer health without sacrificing taste, even at 100 percent sugar replacement. EverSweet provides consumers with the taste they crave with better sweetness intensity, faster sweetness onset and improved sweetness quality, according to the company, but without the bitterness or off-note aftertaste common with other stevia sweeteners. EverSweet is made with the same sweetness found in the stevia leaf, Reb M and Reb D, using fermentation and a specially crafted baker’s yeast. It’s especially well-suited for use in bars, confections, dairy products and beverages.
