Ingredient Snapshot: PenPlus 2140 is a pre-gelatinized, modified potato starch from Penford Corp. White and odor-free, the dry starch powder has a bland flavor that doesn’t mask or interfere with other flavoring ingredients. It provides excellent freeze/thaw stability in food formulations containing high levels of sugar. PenPlus 2140 is stable at lower pH conditions and under shear, and is also certified kosher. Recommended applications include tortillas and baked goods.
