Blue Diamond Almond Flour is available in three forms: Extra Fine Natural, which has exceptionally fine granulation, is as versatile as blanched flour and maintains a natural light tan color; Extra Fine Blanched, which has a powder-like consistency perfect for delicate baked goods; and Fine Blanched, which adds nutritious texture and toasts to a rich golden color. According to the company, the almond flour can be used as a substitute for traditional flours in a wide array of applications, including bakery applications such as cakes, breads, muffins, crackers and crusts, without compromising taste or texture. A quarter-cup serving contains 6 grams of protein, 3.5 grams of fiber and 75 mg of calcium. Almond flour also is low on the glycemic index, naturally gluten-free and a source of vitamin E.
