Ingredient Snapshot: Introduced by Penford Food Ingredients (now part of Ingredion Inc.) at the Research Chefs Association Culinology Expo in March, GumPlete GF 101 improves texture in gluten-free baked goods applications, such as bread, cookies, muffins and cakes. The blend combines starches and gums to provide structure and cohesion, and offers many benefits, including improved freeze/thaw stability, reduced moisture migration and a 5 to 25 percent application usage. It’s also kosher-certified and non-GMO.
