Wixon identifies macro flavor trends for 2026

Complex flavors and unique sensory experiences top the list.

In its annual flavor forecast, Wixon, a manufacturer of dry and liquid custom taste solutions, has named three macro flavor trends poised to influence new product innovation in the coming months. The trends—Nature’s Pantry, Culinary Flair and Fiery Frontiers—represent the ongoing consumer desire for more exceptional, diverse, and good-tasting flavor experiences, the company says.

Taste remains the top reason people choose a food product, according to Mintel. "Consumers are seeking experiences where texture, aroma and flavor come together to heighten their enjoyment," says Rachael Jarzembowski, Wixon marketing manager. "The trends we identified—Nature’s Pantry, Culinary Flair, and Fiery Frontiers—embrace the market desires for unique sensory experiences and exceptional flavor."

The trends, according to the company, are:

Nature’s Pantry – This consumer-driven trend is a nod to the rise of “feel-good” flavors that not only deliver on taste but align with people’s growing desire for naturalness and their increasing knowledge about the potential benefits of functional flavors. The defining flavors in Nature’s Pantry include a wide variety of florals, herbals, and botanicals. These flavors with benefits address consumer concerns and can be used in endless innovation across categories, both sweet and savory. Beyond the inherent perception of “healthfulness” associated with these flavors, they also lend a sense of freshness and added depth to flavor profiles. Lavender, wild violet, black mint and juniper are a sampling of the bounty of flavors found in Nature’s Pantry.

Culinary Flair - The growing appetite for elevated taste experiences is represented in this macro trend. Pairing comfort flavors with more complex ones leads to combinations that can feel familiar, yet also adventurous and elevated. Chef-inspired flavors and preparation techniques bolster familiar formats and foods. Culinary-curious consumers appreciate layered flavors because they offer complexity along with a sense of indulgence. Layered, descriptive, and indulgent profiles are enhanced by chef-inspired flavors. According to Innova Market Insights, 60% of consumers globally want to explore new things when they try to indulge. When it comes to indulgence, consumers are drawn to products that combine familiar sensations with novel flavors deliver an elevated eating experience.  

Fiery Frontiers – The influence of global cuisines is captured in this trend, while acknowledging the consumer desire for more unusual, spicier flavor experiences. Datassential research shows 66% of US consumers saying they like or love spicy foods and flavors. Globally inspired flavors deliver a rich multicultural experience, with “authentic” and adventurous taste profiles. From traditional Asian staples to emerging Latin American ingredients, exploring regional cuisines and bold, spicy flavors can build deeper and more memorable taste experiences for foods.

“The trio of taste trends we identified all reflect the consumer desire to find out more about the food ... they’re eating,” Jarzembowski says. “It’s not just about supporting personal health and wellness goals with functional ingredients and natural flavors. Of course, that’s part of it. But people are drawn to complex flavors and unique sensory experiences that are inspired by diverse cultures and their cooking techniques.”
