Company: Bunge Loders Croklaan

Ingredient Snapshot: Bakers now have a complete line of high-stability soy shortenings to maximize the taste, texture, and functionality of icings, cakes, pies, cookies, donuts, and tortillas. Bunge Loders Croklaan will debut its complete portfolio of Vream Elite Premium Shortenings at this year’s International Baking Industry Exposition (IBIE) in Las Vegas (Sept. 7-11).

“Shortening is a key ingredient in bakery, but bakers still face challenges in finding products that are easy to use while also delivering great sensory experiences across today’s most popular applications,” said Mark Stavro, senior director of marketing. “Vream Elite shortenings are made from high-stability soybean oil. They deliver tremendous functionality whether you’re working in cool or warm conditions and are optimized by application to deliver fantastic appearance, texture, and mouthfeel.”

Bunge Loders Croklaan is launching three new Vream Elite shortenings to build on the existing line of icing, donut, and tortilla shortenings that were launched earlier this year. All three new products deliver tremendous workability across a wide range of temperatures. Vream Elite for cake & icing creates cakes with excellent volume and aeration and makes winter white icings that hold colors well. Vream Elite for pie mimics the texture and functionality of lard while delivering great freeze-thaw tolerance together with crusts that are tender and flaky. Vream Elite for cookies enables creaming of ingredients that leads to very smooth dough consistency and allows bakers to create their preferred finished texture, from soft and chewy to crispy.

“Early adopter feedback for Vream Elite is very positive. Customers are excited about its sensory and functionality benefits and how it’s tailored to meet specific needs across icings, cakes, pies, cookies, donuts, and tortillas,” said Tim Surin, vice president of food processor sales for North America.

Vream Elite is available to help bakery brands of all sizes grow, and it expands upon Bunge Loders Croklaan’s portfolio of SansTrans and NH shortenings.
