Ingredient Snapshot: Anderson Global Group has partnered with South Korean manufacturer CJ CheilJedang to offer AllSweet Allulose Low-Calorie Sugar to food and beverage formulators seeking to reduce total calories—especially those from high fructose corn syrup—in their products. Allulose is a naturally occurring sugar found in fruits and foods such as raisins, figs, kiwis and brown sugar. At only 0.3 kilocalories per gram, AllSweet Allulose brings a clean, satisfying sweetness to bakery, frozen, confectionary, dairy and beverage applications, according to Anderson Global. In addition, it performs like sugar in formulations and delivers the sweet taste consumers crave. Unlike high-intensity sweeteners, AllSweet Allulose can replicate the hallmark properties of sugar, such as browning while baking; can be used as a bulking agent; and has no unpleasant or bitter aftertaste. It’s made from non-GMO corn, making it a clean-label allulose low-calorie sugar replacement, says the company.
