ProBake Binder receives Kosher Parve Certification
The plant-based egg replacement ingredient has only six ingredients.

Umami United has announced that ProBake Binder, its plant-based egg replacement ingredient for industrial bakeries, has been granted Kosher Parve certification by the Orthodox Union (OU). This certification enables manufacturers with kosher-certified product lines to incorporate ProBake Binder without compromising their existing certifications, removing a critical barrier to ingredient innovation, the company notes.
For industrial bakeries operating under kosher certification, ingredient sourcing is constrained by the need to maintain kosher status across their entire product portfolio. ProBake Binder's OU Kosher Parve certification means these manufacturers can now adopt advanced egg replacement technology while maintaining full compliance.
"Many of our customers manufacture kosher-certified products and need every ingredient to maintain that status," says Hiroto Yamazaki, CEO at Umami United. "When you've built kosher certification into your operations, you can't just adopt a new ingredient that breaks compliance, no matter how functional or innovative it is. By achieving OU Kosher Parve certification, we're ensuring ProBake Binder fits seamlessly into existing kosher-certified production lines."
Maintaining kosher compliance while innovating
The Kosher Parve designation, which indicates that a product contains no meat or dairy, positions ProBake Binder as compatible with the full range of kosher product categories. Manufacturers with kosher-certified cookies, muffins, pound cakes, cupcakes, and other baked goods can maintain certification while replacing eggs with ProBake Binder, no reformulation or recertification required.
"We're solving a very specific problem: manufacturers need egg replacement solutions that don't force them to choose between innovation and compliance," adds Yamazaki. "Our customers told us kosher certification was essential for their operations, so we made it a priority. ProBake Binder now delivers the functional performance they need with the certification status they require."
Kosher certification meets clean-label innovationProBake Binder contains only six simple, kosher-certified ingredients: konjac, tapioca starch, pumpkin, sea salt, carrot, and kelp. Each gram functionally replaces one whole egg, delivering exceptional binding, water retention, and emulsification properties across bakery applications, the company says.
The shelf-stable powder offers 18-month ambient shelf life and reportedly requires over 90% less storage space than equivalent liquid egg volumes, enabling manufacturers to achieve supply chain stability, operational efficiency, and protection against egg market volatility while maintaining kosher compliance.
